Nilagang Baka (Beef Stew in Clear Broth)



Nilagang Baka or beef stew in clear broth is a famous Filipinos comfort food. Beef shank or ribs are the beef parts that are perfect for this dish. Yes, this dish requires longer cooking time if you boil the meat the traditional way, however with the advent of pressure cooking time reduce a lot. Do take note, that to achieve the clear broth you need to scoop out the scums of the boiling meat the scums will cloud the broth if not removed


This dish is very popular to cook when raining or during weekends as family bonding dish. This one-pot meal is very easy to cook and really satisfying. You can use any vegetables of your choice as long as it is suitable for boiling.


Nilagang Baka (Beef Stew in Clear Broth)


Ingredients
• 1 kilo of beef shank meat, sliced ​​medium-sized
• 4 pcs potatoes sliced ​​half each or 2 pcs sweet potatoes sliced ​​ same size as the potatoes
• 6 pcs of plantain, divided into two each (skin on)
• 2 pcs sweet corn divided into four
• 1 small (1/2 big) cabbage cut into four
• 1 pack Baguio beans (French beans)
• 4 inches of sliced ​​ginger and smashed
• 3 pcs onions, quartered
• 1 bundle of petchay or bok choy
• 1 tsp Pepper corns
• 2 pcs beef cubes
• Salt and pepper for seasoning
• 4 cups water or more


Instructions:
1. In large saucepan, place the beef and water. Boil and remove scums or dirt floating in the broth.
2. Add onion, pepper corns, ginger, corn and a piece of beef cubes. Boil until the beef is cooked and tender. If you are using a pressure cooker, transfer the boiled meat to pressure cooke and boil for 30 minutes. For normal boiling, simmer for 1 ½ hours or until beef meat is tender.
3. When the beef meat is tender, remove it from the pot and set aside. Add water to the broth if necessary, put the beef cubes, potatoes; sweet potato and banana, when almost cooked put the beans and simmer the soup for 3 minutes.
4. Place the cabbage and petchay. Return the beef to the vegetables. Season with salt and pepper and boil for another one minute
5. Turn off the heat.
